    No time to cook? Try this easy microwave scrambled eggs recipe. Fluffy and delicious like the traditional egg scramble, but made in 2 minutes in a bowl. It’s perfect for a quick protein-packed meal!

    Scrambled Eggs in Microwave

    For breakfast, lunch and dinner, eggs have always been part of my diet. They are versatile, satisfying and so healthy: is rich in protein and nutrients! I usually eat them in pancakes, over avocado toasts or in egg scrambles almost everyday.

    It was actually while making a scramble in a rush that I got the revelation. “Matteo, why don’t you make scrambled eggs in the microwave? It’s so quick and easy..”. Those were the words of my girlfriend on that Monday morning, the morning I found out you can cook eggs in the microwave. From that moment on my meals haven’t looked the same! Making eggs is now so quick and simple that I only need two minutes, a bowl and a microwave!

    The ingredients

    The ingredients for microwaved scrambled eggs are exactly the same as the ones you need for the original recipe. The only difference is going to be the cooking method.

    • Eggs: Choose two large fresh eggs, best if they are from free-range chickens.
    • Milk: Use milk for scrambled eggs that are fluffier and creamier. You can opt for dairy milk or replace with nondairy alternatives such unsweetened soy milk, oat milk or rice milk.
    • Olive oil or butter: The use of a cooking fat will make your eggs tastier and fluffier. I like olive oil, but you can easily replace with a vegetable oil of your choice or melted butter.
    • Salt and pepper: These are essential for seasoning the dish and enhancing all flavors. Add as much salt and pepper as you feel necessary.

    Additional ingredients for scrambled eggs

    Scrambled eggs are a versatile dish that you can easily personalize with additional ingredients. From cheese to mushrooms, pick and choose your favorite. And if you still need ideas, here are some extras that you can add to your meal:

    • Cheese: Cheddar, mozzarella, Parmesan cheese, feta, blue cheese.
    • Meat: Ham, bacon, sausage, salami, chorizo.
    • Vegetables: Mushrooms, tomatoes, red bell peppers, onions, spinach, jalapeños.
    • Herbs and seasonings: Garlic powder, onion powder, smoked paprika, cumin, red pepper flakes.
    • Sauces: Mayonnaise, ketchup, hot sauce, sriracha, pesto.

    How to make scrambled eggs in microwave?

    In a microwave safe bowl, whisk together eggs, milk, oil or butter, salt and pepper. Microwave on high, uncovered, for 45 seconds.

    After 45 seconds, remove the eggs from the microwave, give a good stir and cook for additional 30-45 seconds. The scrambled eggs should be light and fluffy. Serve with shredded cheese and ham if you desire.

    Tips for the best microwave scrambled eggs

    Making an egg scramble in the microwave is indeed very simple. Yet there are still a couple of things you should keep in mind that will allow you to make the best scramble ever.

    • Use fresh eggs: Fresh eggs have a better texture and flavor. Check the expiration date on the carton.
    • Add milk and oil (or butter): The use of milk and oil (or butter) improves both taste and texture of the dish, making the scramble creamier, fluffier and richer in flavor.
    • Season to your likings: When mixing the ingredients, add in salt, pepper and any additional seasonings you may like. Seasoning before microwaving ensures even distribution of flavors.
    • Get creative: Customize your dish with the addition of extra ingredients such as shredded cheese, ham, tomatoes or mushrooms.
    • Cook in two rounds: After whisking all ingredients together, microwave the eggs for 45 seconds then stop, give it a good stir and microwave for additional 30 to 45 seconds. You know they are done when light and fluffy.
    • Don’t overcook: Make sure you don’t microwave scrambled eggs for too long, or they will get dry and rubbery quite easily. After stirring for the second time, cook for additional 30 to 45 seconds.
    • Serve immediately: This dish tastes better enjoyed fresh off the microwave; the longer you wait, the less fluffy your eggs will be.

    This microwave egg scramble recipe makes a great breakfast, lunch or dinner. For a more complete meal, I recommend serving with a source of complex carbs and healthy fats.     • Vegetables: Fresh, grilled or roasted vegetables are a great addition to scrambled eggs. Besides adding flavor, they will make your meal more nourishing.
    • Smoked salmon: Assemble a satisfying breakfast plate by siding your scramble with smoked salmon, avocado and wholegrain bread.
    • Ham, bacon or sausages: Serve your scrambled eggs alongside crispy bacon strips or sausages for a classic American breakfast.
    • Hash browns or potatoes: Serve microwave scrambled eggs with crispy hash browns or roasted potatoes for a hearty breakfast or dinner.
